Who's up for some seafood?

One of my other hobbies (among the many) is fishing...specifically bow fishing. As the name implies we shoot the fish with a bow and arrow which is as challenging as it is fun. This past weekend I headed out to the coast with the intention of doing some flounder gigging, however the sea gods had other plans. There wasn't a flounder to be found, but we did see plenty of sting ray. Our average was around 45 pounds per stingray, which believe it or not is on the smaller size for what we typically go for. By the end of the night we were at nearly 300 pounds :)       It was a blast and now I have a freezer full of some of the most amazing meat you'll ever try.

How do you prepare those?  I've heard of Skate wings being cut up to mimic scallops but not Stingrays.

Yeah the taste is going to be very similar to scallops, and yes skate and some ray species are often used to mimic scallops. These rays when filleted end up looking like a stack of cards.
We prepare them like many other types of fish. We have done a breading and fry, as well as a bake with simple seasoning. I am always on the lookout for new ways to cook them up. I've actually been toying with they idea of finishing off the slices and cooking them up almost like chips. It would give an interesting twist to fish and chips :)
