Removing the galley?

Has anybody given any thought to removing the galley altogether?  We just became proud owners of an 8.1 on Friday and, of course, my engineer brain is already thinking about what changes I might like to make. One of the things I keep coming back to is the galley. Growing up in the Boy Scouts, having food in the tent was always a big no-no so I really don't see us cooking inside the QS or even storing much food in there. It seems like the space that the galley takes up could be more useful with a different configuration.

Maybe plastic drawers with bins to stack on top?  Maybe cube shelves with bins in them?  There are lots of ways it could be done but the point is, there's a lot of wasted space if you're not actually going to use the galley *as* a galley. Has anybody pulled theirs out?  Can it be done in a way that it could put back in if we decide to sell the QS later?  Any suggestions for the fuse box?  Maybe relocate it into the wall where the AC plug is?

I'm not planning to make any major modifications until we've used it a few times. Just thinking ahead. :)

I pulled mine out to cover the floor with vinyl tiles. It's just screwed down with a bunch of self tapping screws. Removing it permanently would be more difficult since the drain and electrical come through the floor there. You would have to relocate your converter.
