Purchased a 2010 CampLite 11 a few years ago. It was one of the early "basic" CampLite TT off of the LivinLite assembly line. Probably towed it 15,000 miles so far. Made several modifications so far with the addition of TV, microwave, larger wood counter top without sink, and leave the dinette set up as full time as a bed with memory foam 60"X80" mattress. This CampLite came equipped with a 13,500BTU AC unit and gets cold "very" quickly when the temps are 90F+. It does not have LP gas system. We use electric teflon skillet & microwave for cooking. Removed the sink & water tank. We use Clorox wipes to clean coffee cups, skillet, and our hands. Use bottled water for coffee. We also use an Engle 35 quart Deep Blue ice cooler, that's efficient with ice use.
Purchased interlocking vinyl tile for $6.50 per tile at Lowes and installed directly over aluminum floor during the summer. Really like this vinyl flooring. Camped with it in the upper 20s, so far.

Honestly, while I think your approach is a bit on the Spartan side, I will admit we haven't lit the stove inside since the PDI, we do all our dishes outside and mostly use the sink for washing hands and brushing teeth. When we were shopping I did also decide that a dinette/bed combo would spent 99.9% of its service life as a bed.

We did not have enough counter top space initially. Told my Wife I could install a larger wood counter top and she said not to install the sink. After trying this set up we "really" liked it. We use paper plates and don't have dishes to wash. I can convert the camper back to original in a day if we sell it.
The camper has a gaucho couch we use as a dinette with an aluminum table. We have a porta potty to prevent those middle of the night trips to the restroom to pee, avoiding skunks & other animals.
Use a Lasco 110V heater for those cool nights.
Use carpet mats over the vinyl floor.

It was a misty rain when we went to bed and woke up to see snow, very pleasant! Keep a 4' step ladder & car wash brush with long handle for cleaning bugs off of the front of the camper. The ladder & brush worked great pushing snow off of the TT & TV, too.
Yep, it's cozy! We didn't know how it was going to go on the 23 night trip last September, but were surprised to find the rig worked nicely for two, since there were many places to see & visit daily. The rig is easy to set up & knock down when staying only one night, too. Had a couple 450 mile travel days and the rig is easy to handle while driving, too.
We're ready for another adventure, washed the CampLite yesterday, will post photos online during the next trip, soon!

We really enjoy all the mods! We talk about buying a larger camper, but with the way this CampLite is set up and how tough it's built, we aren't in any hurry to sell this one!

Oops, I always get the names mixed up. We have never been to Huntington Beach,but have been to Hunting Island. I thought that was it through the window!!

The next morning after talking to the neighbor, we moved away from the swampy area to a campsite surrounded by dry ground. Can only imagine what would happen stepping on a large alligator in the middle of the night! :o
We have only camped for two weekends, but it has gone pretty much the way we thought it would. We are inside only to sleep, so in the middle of the night, wild animals are welcome to the campsite, so long as they don't gnaw on the camper!

Another true story:
We were camping with a couple from the UK one night. Our
friends had canned alcoholic drinks, stronger than beer. They left them outside, figuring the animals would not bother canned drinks. While sitting around the campfire, it sounded like animals fighting and making all kinds of loud noise. The Racoons chewed holes in the cans and drank the contents. One Racoon even fell out of a tree during all the commotion!
